DEar Ingrid,
I was wondering what you think about the raw food diet. Most ayurvedics and traditional doctors advocate the raw food diet(with exception to meat) saying that cooking vegetables destroys its nutrtional value, and gets rid of valuable pottasium from our vegetables. They say we should never tamper with nature, it will only lead to disease...ofcourse most ayurvedics are vegeterians so the question of meat does not arise..
Also what do you reccomend we do to tackle the problem of pesticides that are sprayed on our vegetables and fruits???

First, I do not believe that Ayurvedic medicine advocates raw foods. In fact, the basic tenet is that sooner or later, all foods are cooked, either by fire or the agni in the gastric juices and digestive tract. To the extent that food is cooked, it is easier to digest, especially if it is cooked with spices over fire (not with electricity or microwaves.)
Another advantage of cooked foods is that they are relatively less likely to be contaminated with bacteria and larvae and other hazards of a raw foods diet.
Obviously, fruit was meant to be consumed raw, but humans discovered fire for a reason. So far as pesticides go, it is better to eat organically grown foods. Otherwise, you ingest some toxins. If you peel the vegetables to reduce toxicity, you change the chemistry. For instance, with potatoes, the peel is alkalizing and the inside is acifying. If you eat the entire potato, it's more balanced than if you peel off the skins.
The subject is enormous, too big for a single post, but you might want to get some books on the nutrition written from different perspectives. |
